Prepare the Boom Boom Sauce

Mix the Sauce
In a medium bowl, combine mayonnaise, Sriracha sauce, honey, lime juice, and garlic powder. Mix well until smooth and set aside.
Prepare the Shrimp

Set Up Breading Station
In three separate shallow bowls, place the flour in one, the beaten egg in another, and the panko breadcrumbs mixed with salt and black pepper in the third.

Bread the Shrimp
Dip each shrimp first into the flour, then into the egg, and finally coat with panko breadcrumbs. Set aside on a plate.

Fry the Shrimp
In a large skillet, heat the oil over medium-high heat. Once hot, add the breaded shrimp in batches and fry until golden brown, about 2-3 minutes per side. Remove and place on a paper towel-lined plate to drain excess oil.
Assemble the Tacos

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

On each tortilla, layer shredded cabbage, a generous amount of fried shrimp, a sprinkle of shredded jack cheese, diced tomatoes, and drizzle with the boom boom sauce.

Serve the assembled tacos alongside a portion of waffle fries for a complete meal.
