Chicken Preparation

    Marinate the Chicken

    In a small bowl, combine olive oil and cajun seasoning. Coat the chicken breasts in the marinade and let sit for at least 30 minutes.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Cook the marinated chicken breasts for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and top each breast with jack cheese. Cover until cheese melts.

Bacon and Onions

    Cook the Bacon

    In a skillet over medium heat, fry the bacon slices until crispy. Remove and drain on paper towels.

    Caramelize Onions

    In the same skillet, add sliced onions and cook over low heat for about 15-20 minutes, stirring occasionally until they are golden brown and caramelized.

Assembly

    Prepare the Fries

    While the chicken and onions are cooking, prepare the waffle fries according to package instructions or fry them until crispy.

    Assemble the Sandwich

    On the bottom half of each brioche bun, layer lettuce, the blackened chicken breast with melted jack cheese, caramelized onions, crispy bacon, and tomato slices. Drizzle with sriracha aioli and top with the other half of the bun.
