Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm milk (around 110°F or 43°C) and granulated sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.

  2. 2

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, salt, and the remaining granulated sugar until well combined.

  3. 3

    Combine Ingredients

Make a well in the center of the dry ingredients. Add the frothy yeast mixture, beaten eggs, and melted unsalted butter. Mix until a dough forms.

  4. 4

    Knead the Dough

Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until it’s smooth and elastic.

  5. 5

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.

Frying and Serving

  1. 6

    Prepare Oil

In a deep pot or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

  2. 7

    Shape Beignets

Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out to about ¼ inch thick and cut it into squares or circles.

  3. 8

    Fry Beignets

Carefully drop a few pieces of dough into the hot oil, being careful not to overcrowd the pot. Fry for about 2-3 minutes on each side until they are golden brown.

  4. 9

    Drain and Dust

Remove the beignets with a slotted spoon and drain them on paper towels. While they are still warm, dust generously with powdered sugar.

  5. 10

    Serve Warm

Serve the beignets warm, optionally with additional powdered sugar on the side.
