Parmesan Truffle Fries

Method

Steak

  1. 1

    Prepare the Steak

Take the wagyu hanger steak out of the fridge and let it come to room temperature for about 30 minutes. Preheat your grill to high heat.

  2. 2

    Season the Steak

Rub the steak with olive oil, then season generously with salt, black pepper, and fresh thyme on both sides.

  3. 3

    Grill the Steak

Place the steak on the grill and cook for about 4-5 minutes per side for medium-rare, or to your desired doneness. Use a meat thermometer to check the internal temperature.

  4. 4

    Rest the Steak

Remove the steak from the grill and let it rest for 10 minutes before slicing.

Parmesan Truffle Fries

  1. 5

    Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin fries and soak them in cold water for at least 30 minutes.

  2. 6

    Fry the Potatoes

Heat oil in a deep fryer or a large pot to 180°C (350°F). Drain and dry the soaked fries, then fry them in batches until golden and crispy, about 5-7 minutes.

  3. 7

    Season and Serve

Transfer the fries to a paper towel-lined plate to drain excess oil. Drizzle with truffle oil, sprinkle with salt, black pepper, and grated Parmesan cheese. Toss to combine and garnish with chopped parsley.

Roasted Mushrooms

  1. 8

    Prepare the Mushrooms

Clean the mixed mushrooms and slice them if they are large. Preheat the oven to 200°C (400°F).

  2. 9

    Season the Mushrooms

In a bowl, toss the mushrooms with minced garlic, olive oil, salt, black pepper, and fresh thyme.

  3. 10

    Roast the Mushrooms

Spread the mushrooms evenly on a baking sheet and roast in the oven for 20-25 minutes until golden and tender.

Red Wine Sauce

  1. 11

    Sauté Shallots

In a saucepan, melt the butter over medium heat. Add finely chopped shallots and sauté until translucent, about 3 minutes.

  2. 12

    Deglaze with Wine

Pour in the red wine and bring to a simmer. Cook for about 5 minutes, allowing it to reduce slightly.

  3. 13

    Add Beef Stock

Add the beef stock, salt, and black pepper. Simmer for another 10-15 minutes until the sauce thickens.

  4. 14

    Finish the Sauce

Strain the sauce through a fine-mesh sieve for a smooth texture, if desired.
