    Marinate the Steak (Optional)

    If you choose to use a marinade, combine red wine, soy sauce, Worcestershire sauce, and honey in a bowl. Submerge the bone-in ribeye steaks in the marinade and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

    Prepare the Grill

    Soak the hickory or oak wood chips in water for at least 30 minutes prior to grilling. This will help create smoke on the grill.

    Season the Steak

    Remove the steak from the marinade (if marinated). Pat dry with paper towels. Rub both sides of the steak with olive oil, kosher salt, and black pepper. Insert the garlic cloves and rosemary sprigs into the meat for added flavor.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat, around 450°F (230°C). Place the soaked wood chips in a smoker box or wrap them in aluminum foil with holes poked in it and place it on the grill.

    Grill the Steak

    Once the grill is hot and the wood chips are smoking, place the steak on the grill grates. Grill for about 4-5 minutes on one side, then flip and grill for another 4-5 minutes for medium-rare. Adjust the cooking time for your preferred doneness.

    Rest the Steak

    Remove the steak from the grill and let it rest for about 10 minutes before slicing. This allows the juices to redistribute.
