Marinating Chicken

Prepare the Marinade
In a large bowl, combine chopped rosemary, honey, minced garlic, olive oil, salt, and black pepper. Mix well.

Mix Dry Ingredients
In a separate bowl, combine all-purpose flour, cornstarch, paprika, onion powder, salt, and black pepper. Mix well.

Prepare Buttermilk Dip
In another bowl, pour the buttermilk. This will be used to dip the marinated chicken before coating.
Frying the Chicken

Heat Oil
In a large frying pan or deep fryer, heat oil over medium-high heat until it reaches 350°F (175°C).

Coat the Chicken
Remove chicken from the marinade, allowing excess to drip off. Dip each piece into the buttermilk, then coat with the flour mixture, pressing gently to adhere.

Fry the Chicken
Carefully place the coated chicken pieces into the hot oil. Fry until golden brown and cooked through, about 12-15 minutes per side. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

Drain and Rest
Once cooked, remove the chicken from the oil and drain on a wire rack or paper towels. Let rest for a few minutes before serving.
