Roasted Pork Loin

Prepare the Pork Loin
Preheat your oven to 375°F (190°C).

Season the Pork
In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the pork loin.

Roast the Pork
Place the seasoned pork loin in a roasting pan and roast for about 1 hour, or until the internal temperature reaches 145°F (63°C).

Rest the Meat
Once done, remove the pork from the oven and let it rest for 10-15 minutes before slicing.
Apple Chutney

Cook the Chutney
In a large saucepan, combine diced apples, chopped onion, brown sugar, apple cider vinegar, ground cinnamon, ground ginger, and salt. Bring to a boil over medium heat.

Simmer the Chutney
Reduce heat and let it simmer for 30 minutes, stirring occasionally, until the apples are tender and the mixture has thickened.

Remove from heat and let the chutney cool before serving.

In a large skillet, heat olive oil over medium heat. Add trimmed green beans, salt, and black pepper.
