Method

Preparation of Redfish and Crab Topping

    Prepare the Redfish

    Preheat the oven to 375°F (190°C). Season the redfish fillets with olive oil, salt, and black pepper on both sides.

    Sauté Garlic

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 3 minced garlic cloves and sauté until fragrant (about 1-2 minutes).

    Mix Crab Meat

    In a bowl, combine sautéed garlic, lump crab meat, lemon juice, salt, and black pepper. Mix gently to avoid breaking the crab meat.

    Top the Fish

    Place the redfish in a baking dish. Top each fillet with the crab mixture.

Cooking the Redfish

    Bake

    Bake the redfish in the preheated oven for 15-20 minutes or until the fish flakes easily with a fork.

Making Garlic Mash

    Boil Potatoes

    Peel and chop the potatoes into chunks. Place in a pot, cover with water, add salt, and boil until tender (about 15-20 minutes).

    Sauté Garlic

    In a small saucepan, melt 2 tablespoons of butter and sauté 2 minced garlic cloves until fragrant.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add the sautéed garlic, remaining butter, cream, salt, and black pepper. Mash until smooth and creamy.

Preparing Thin Beans

    Blanch the Green Beans

    Trim the ends of the green beans and blanch them in boiling salted water for 3-4 minutes until bright green.

    Sauté Beans

    Drain the beans and immediately transfer them to an ice bath to stop cooking. In a skillet, heat olive oil, then add the beans, salt, and black pepper. Sauté for 4-5 minutes until tender.

Making Charred Tomato Lemon Butter

    Char the Tomatoes

    Heat a skillet over medium-high heat. Add cherry tomatoes and cook until they blister and char slightly (about 5-7 minutes).

    Prepare Lemon Butter

    Add butter to the skillet with cherry tomatoes, stir in lemon juice, salt, and black pepper. Cook until the butter melts and is well combined.
