Main Dish Preparation

    Soak the Beans

    Rinse the red beans under cold water. Place them in a bowl, cover with water, and let them soak overnight or for at least 8 hours.

    Prepare Vegetables

    Dice the onion, green bell pepper, and celery. Mince the garlic cloves.

    Sauté Vegetables

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, green bell pepper, and celery. Sauté for about 5 minutes until softened.

    Add Garlic and Spices

    Add the minced garlic, bay leaf, cumin, paprika, salt, and black pepper to the pot. Stir and cook for an additional 2 minutes.

    Cook the Beans

    Drain and rinse the soaked red beans. Add them to the pot along with 2 cups of vegetable broth. Bring to a boil, then reduce the heat to low. Cover and simmer for about 1 hour or until the beans are tender.

    Cook the Rice

    In a separate pot, bring 1 cup of vegetable broth to a boil. Add 1 cup of long grain rice, cover, and reduce heat to low. Cook for about 15-20 minutes or until the rice is tender and the liquid is absorbed.

    Combine and Serve

    Once the beans and rice are cooked, serve the red beans over a bed of rice. Adjust seasoning with salt and pepper to taste.

    Prepare Broccoli

    Wash and cut the broccoli into florets.

    Sauté Broccoli

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the broccoli florets and sauté for about 5 minutes.

    Season Broccoli

    Sprinkle garlic powder and salt over the sautéed broccoli. Stir well and cook for an additional 2-3 minutes until tender.

    Serve

    Place the sautéed broccoli on the plate next to the red beans and rice.
