Preparing the Filet

    Generously season both sides of the prime filet mignon pieces with kosher salt, freshly ground black pepper, garlic powder, and smoked paprika. Make sure to rub the spices into the meat for an even coating.

    In a large skillet, heat the olive oil over medium-high heat. Allow the oil to heat until it starts to shimmer, indicating it is hot enough for searing.
