Preparing the Filling

    Prepare the Fruit

    Wash and slice your chosen seasonal fruit into bite-sized pieces. If using berries, you can leave them whole.

    Mix the Filling Ingredients

    In a large bowl, combine the fruit, granulated sugar, lemon juice, cornstarch, and ground cinnamon. Toss gently until the fruit is evenly coated. Let it sit for about 15 minutes to allow the sugar to draw out the juices.

Making the Topping

    Combine Dry Ingredients

    In another bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.

    Add Wet Ingredients

    Stir in the milk, melted butter, and vanilla extract until just combined. Be careful not to overmix; a few lumps are okay.

Assembling and Baking

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Combine Filling and Topping

    Pour the fruit mixture into a greased 9x13 inch baking dish. Drop spoonfuls of the topping batter evenly over the fruit, spreading it out as best as you can.

    Bake the Cobbler

    Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
