Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour and salt. Mix well to ensure even distribution.

Cut in Butter
Add the unsalted butter to the flour mixture. Use a pastry cutter or your fingers to incorporate the butter until the mixture resembles coarse crumbs.

Add Water
Gradually add the cold water to the dough mixture, stirring until a dough forms. If the dough is too dry, add a little more water, one teaspoon at a time.

Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Wash, peel (if necessary), and chop the fresh fruit into small pieces. Place them in a mixing bowl.

Add sugar, ground cinnamon, cornstarch, and lemon juice to the fruit. Stir well to combine all ingredients and let sit for 10 minutes to allow flavors to meld.

Roll Out Dough
On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles using a large round cutter (about 4-5 inches in diameter).

Place a tablespoon of the fruit filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for extra security.

In a deep skillet or frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Carefully place a few pies in the hot oil, frying them for about 2-3 minutes per side, or until golden brown. Remove with a slotted spoon and drain on paper towels.
