In a large bowl, pour the buttermilk over the catfish fillets, ensuring they are fully submerged. Cover the bowl and refrigerate for at least 30 minutes to allow the fish to soak and absorb the flavors.

In a separate shallow dish, mix the cornmeal, all-purpose flour, salt, black pepper, garlic powder, and cayenne pepper until well combined. This will be the coating for the catfish.

In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat. You will know the oil is ready when it reaches 350°F (175°C) or when a small drop of batter sizzles upon contact.
