Frying Oysters

    Prepare the Breading

    In a shallow bowl, combine the cornmeal, all-purpose flour, and Cajun seasoning. Mix well.

    Prepare the Wet Mixture

    In another bowl, whisk together the egg and milk until fully combined.

    Bread the Oysters

    Dip each oyster into the wet mixture first, then dredge it in the cornmeal mixture, ensuring it's well-coated.

    Heat the Oil

    In a deep skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Oysters

    Working in batches, carefully add the breaded oysters to the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Making Comeback Sauce

    Combine Ingredients

    In a bowl, mix together the mayonnaise, ketchup, Worcestershire sauce, hot sauce, garlic powder, paprika, lemon juice, salt, and black pepper. Stir until smooth.

    Taste the sauce and adjust the seasoning with additional salt and pepper if needed.

Assembling the Po Boy

    Wash the lettuce and slice the tomato. Set aside.

    Slice the po-boy rolls open, spread a generous amount of comeback sauce on the inside, add a layer of lettuce, then the fried oysters, and top with tomato slices.
