Preparing the Calamari

Clean and Dry the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. Ensure they are completely dry to achieve a crispy texture when fried.

Prepare the Flour Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper until fully combined.

Coat the Calamari
Toss the calamari rings in the flour mixture until fully coated. Shake off any excess flour.

Fry the Calamari
Working in batches, carefully add the coated calamari rings to the hot oil. Fry for about 2-3 minutes, or until golden brown and crispy. Avoid overcrowding the pan.

Drain and Keep Warm
Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Keep warm in a low oven while you fry the remaining batches.
Making the Hot & Sour Dipping Sauce

Combine Ingredients
In a small bowl, mix the finely chopped jalapeño, minced garlic, grated ginger, soy sauce, rice vinegar, honey, red pepper flakes, and sesame oil until well combined.

Plate the Dish
Arrange the fried calamari on a serving platter and serve with the hot & sour dipping sauce on the side.
