Method

Cake

  1. 1

    Prepare the Oven and Pans

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Combine Dry Ingredients

In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. 3

    Add Wet Ingredients

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.

  4. 4

    Incorporate Boiling Water

Stir in the boiling water until the batter is smooth. The batter will be thin.

  5. 5

    Bake the Cake

Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

  6. 6

    Cool the Cakes

Once baked, remove the pans from the oven and let them cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.

Ganache

  1. 7

    Heat the Cream

In a small saucepan over medium heat, bring the heavy cream to a simmer.

  2. 8

    Melt the Chocolate

Remove the saucepan from heat and add the semisweet chocolate chips. Let them sit for 5 minutes to soften.

  3. 9

    Whisk Until Smooth

Whisk the chocolate and cream together until smooth and glossy.

  4. 10

    Cool the Ganache

Let the ganache cool for about 10 minutes until it thickens slightly.

  5. 11

    Frost the Cake

Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of ganache on top, place the second layer on top, and then pour the remaining ganache over the top.
