    In a separate bowl, whisk together the egg yolks. Slowly pour a small amount of the hot cream mixture into the yolks while whisking continuously to temper them.

    Pour the tempered egg yolk mixture back into the saucepan with the cream mixture. Cook over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and stir in vanilla extract.

    Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate until completely cool, about 2-4 hours.

Flavoring the Ice Cream
