Preparing the Pie Crust

    Make the Pie Dough

    In a large bowl, mix together 2.5 cups of all-purpose flour, 1 cup of unsalted butter (cubed), 0.5 tbs of granulated sugar, and 0.5 tsp of salt until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add 6 tbs of ice water, one tablespoon at a time, mixing until the dough holds together without being sticky. Divide the dough into two balls, flatten them into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preparing the Apple Filling

    Prepare the Apples

    Peel, core, and slice the apples, yielding about 6 cups. Place them in a large bowl.

    Mix Ingredients

    Add 0.75 cups of granulated sugar, 0.25 cups of brown sugar, 1 tsp of ground cinnamon, 0.25 tsp of ground nutmeg, 2 tbs of all-purpose flour, 1 tbs of lemon juice, and 1 tsp of vanilla extract to the apples. Toss to coat evenly.

Assembling and Baking the Pie

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Roll Out the Dough

    On a lightly floured surface, roll out one disc of the chilled pie dough to fit a 9-inch pie pan. Place it in the pan and trim the edges.

    Fill the Pie

    Pour the apple filling into the prepared pie crust, spreading it evenly.

    Top with Second Crust

    Roll out the second disc of dough and place it over the filling. Cut slits in the top crust for steam to escape. Crimp the edges to seal.

    Bake the Pie

    Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 35-45 minutes, or until the apples are tender and the crust is golden brown.

    Cool the Pie

    Allow the pie to cool for at least 2 hours before slicing.

Serving the Pie

    Slice the cooled apple pie and serve each slice with a scoop of vanilla ice cream on top.
