Method

Filet Preparation

    Season the Filet

    Sprinkle the USDA Prime Filet Mignon with salt and black pepper on both sides.

    Sear the Filet

    In a skillet over medium-high heat, add olive oil. Once hot, add the filet and sear for 3-4 minutes on each side for medium-rare. Adjust cooking time for desired doneness.

Bacon-Cheddar Mash

    Prepare the Potatoes

    Peel and cut the potatoes into quarters. Place in a pot of salted water and boil until tender, about 15-20 minutes.

    Cook the Bacon

    In a skillet, cook the bacon slices until crispy. Remove and chop into small pieces, reserving the bacon fat.

    Mash the Potatoes

    Drain the potatoes, return to the pot, and add butter, milk, cheddar cheese, and chopped bacon. Mash until smooth and creamy.

Sautéed Asparagus

    Prepare the Asparagus

    Trim the woody ends from the asparagus. Mince the garlic.

    Sauté the Asparagus

    In a skillet, heat olive oil over medium heat. Add minced garlic and asparagus, season with salt and pepper. Sauté for 5-7 minutes until tender.

Crispy Onions

    Slice the Onion

    Thinly slice the medium onion.

    Fry the Onions

    Dredge the onion slices in flour, then heat oil in a deep pan. Fry the onions until golden brown and crispy, about 2-3 minutes. Drain on paper towels.

Red Wine Sauce

    Sauté the Shallot

    In the same skillet used for the filet, add a little butter. Sauté the chopped shallot until translucent.

    Make the Sauce

    Add red wine, beef broth, and thyme to the skillet. Simmer for 10 minutes until reduced and slightly thickened. Stir in butter before serving.
