Beef Preparation

Prepare the Beef Patties

In a large bowl, combine the Certified Angus Beef, brisket, short rib, salt, and black pepper. Mix until well combined, then form into 4 equal patties.

Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on one side until browned, then flip them and place a slice of white cheddar on each patty. Cook for an additional 4-5 minutes or until the internal temperature reaches 160°F.

Make the Cowboy Sauce

In a small bowl, whisk together the mayonnaise, BBQ sauce, and hot sauce until smooth. Set aside.

Assemble the Burger

Toast the Buns

Lightly toast the brioche burger buns on the grill or in a toaster until golden brown.

Build the Stackhouse Smash

On the bottom half of each toasted brioche bun, place a beef patty with melted white cheddar. Top with a generous scoop of government cheese, a handful of crispy onion rings, and fried pickles. Drizzle the cowboy sauce over the top and finish with the top half of the bun.
