    Prepare the Wild Rice Pilaf

    In a pot, bring 2 cups of water to a boil. Add the wild rice and a pinch of salt. Reduce heat, cover, and simmer for 45 minutes or until the rice is tender. Fluff with a fork and set aside.

    Make the Mushroom Cream

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and minced garlic; sauté until translucent. Add the sliced mushrooms and cook until soft. Pour in the heavy cream, season with salt and pepper, and simmer until thickened. Set aside.

    Prepare the Ritz Herb Breaded Walleye

    Preheat the oven to 375°F (190°C). In a bowl, combine crushed Ritz crackers and chopped herbs. Coat each walleye fillet with olive oil, then press into the cracker mixture to coat. Place on a baking sheet lined with parchment paper.

    Bake the Walleye

    Bake the breaded walleye in the preheated oven for 20-25 minutes or until golden brown and cooked through.

    Serve

    On each plate, serve a portion of wild rice pilaf, top with the baked walleye, and drizzle with the mushroom cream sauce. Finish with a squeeze of lemon juice.
