    Cook the Turkey

    In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent. Add ground turkey and cook until browned.

    Make the Gravy

    Sprinkle flour over the turkey mixture and stir to combine. Gradually add chicken broth while stirring to avoid lumps. Add thyme, salt, and pepper, then cook until the mixture thickens. Stir in the mixed vegetables and remove from heat.

    Prepare the Puff Pastry

    Preheat the oven to 400°F (200°C). Roll out puff pastry on a floured surface. Cut it into circles or rectangles to fit your pie dish.

    Assemble the Pot Pie

    Pour the turkey and vegetable mixture into a pie dish. Cover with puff pastry, sealing the edges. Cut slits in the top of the pastry to allow steam to escape.

    Bake

    Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown. Allow to cool slightly before serving.
