    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over high heat, then cover and remove from heat. Let sit for 12 minutes.

    Prepare the Filling

    Once the eggs are done, drain the hot water and fill the pot with cold water to cool the eggs. After they have cooled, peel the eggs and cut them in half lengthwise.

    Mix Ingredients

    In a bowl, remove the yolks and combine them with mayonnaise, Dijon mustard, homemade sriracha, salt, black pepper, and chopped cilantro. Mix until creamy.

    Fill the Eggs

    Spoon or pipe the yolk mixture back into the egg whites.

    Garnish

    Sprinkle with paprika and additional cilantro for garnish.
