Roasting the Tomatoes
Preheat your oven to 400°F (200°C). Toss the cherry tomatoes with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes, or until they are soft and slightly caramelized.

Making the Pesto
In a food processor, combine the basil leaves, pine nuts, Parmesan cheese, minced garlic, olive oil, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning if necessary.

Assembling the Puff Pastry
Roll out the puff pastry sheets on a floured surface to about 1/8 inch thickness. Cut into desired shapes (rectangles or circles). Place them on a baking sheet lined with parchment paper. Brush the edges with beaten egg.

Spread a layer of pesto on each pastry piece. Top with the roasted cherry tomatoes.
