    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for an additional minute.

    Combine Ingredients

    Add pumpkin puree, vegetable broth, coconut milk, cinnamon, nutmeg, salt, and black pepper to the pot. Stir well to combine.

    Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 20 minutes, stirring occasionally.

    Blend the Bisque

    Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches and blend until smooth.
