Fried Polenta with Cherry Tomatoes and Fontina Cheese

Prepare the Polenta
In a large saucepan, bring water to a boil. Add salt and slowly whisk in the polenta. Reduce heat and stir continuously until the mixture thickens, about 5-7 minutes. Remove from heat and pour the polenta into a greased baking dish. Spread evenly and let it cool until set, about 30 minutes.

Fry the Polenta
Once the polenta is set, cut it into squares or rectangles. In a large skillet, heat olive oil over medium heat. Add the polenta pieces and fry until golden brown and crispy on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Sauté Cherry Tomatoes
In the same skillet, add the cherry tomatoes and sauté for 5-7 minutes until they are blistered and juicy. Season with salt and pepper.

Assemble the Dish
On a serving plate, layer the fried polenta pieces, top with sautéed cherry tomatoes, and sprinkle with shredded Fontina cheese and fresh basil.
