Preparation

    Prepare Black Bean Puree

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add black beans, lime juice, salt, and pepper. Mash the mixture with a fork or a potato masher until smooth. Set aside.

    Fry Corn Tortillas

    In a skillet, heat enough olive oil to cover the bottom over medium-high heat. Fry each corn tortilla for about 30 seconds on each side or until golden brown and crispy. Drain on paper towels.

    Prepare Avocado

    Slice the avocado in half, remove the pit, and scoop the flesh out. Slice the flesh into thin pieces.

    Assemble the Dish

    On each fried tortilla, spread a generous amount of black bean puree, top with avocado slices, and crumble queso fresco on top. Serve immediately.
