Prepare the custard
In a large bowl, whisk together eggs, milk, vanilla extract, and cinnamon until well combined.

Soak the croissant loaf
Slice the croissant loaf into thick slices. Dip each slice into the egg mixture, allowing it to soak for a few seconds on each side.

Cook the French toast
Heat a non-stick skillet or griddle over medium heat. Add a little butter to the pan and cook the soaked croissant slices for about 2-3 minutes on each side, or until golden brown.
