Fish Sandwich Ingredients

Method

Fish Sandwich Directions

  1. 1

    Prepare the Slaw

In a large bowl, combine shredded cabbage, shredded carrots, lime juice, and a pinch of salt. Toss to mix well. Set aside to let flavors meld.

  2. 2

    Prepare the Tartar Sauce

In a small bowl, mix together mashed avocado, mayonnaise, garlic powder, and chopped cilantro. Stir until smooth and set aside.

  3. 3

    Bread the Cod

Set up a breading station with flour in one bowl, beaten eggs in another, and a mixture of cornmeal, salt, black pepper, and cayenne pepper in a third bowl. Dip each cod fillet first in flour, then in egg, and finally coat in the cornmeal mixture.

  4. 4

    Fry the Cod

In a large skillet, heat vegetable oil over medium-high heat. Fry the breaded cod fillets for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from skillet and drain on paper towels.

  5. 5

    Assemble the Sandwiches

Toast the burger buns lightly. On the bottom half of each bun, place a piece of fried cod, top with lime slaw, and a generous dollop of avocado tartar. Place the top half of the bun on and serve immediately.
