Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow leaves. Halve them lengthwise.

Season and Roast
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper. Spread them evenly on a baking sheet and roast for about 20-25 minutes, or until they are golden brown and crispy on the outside.

Prepare the Corn
While the Brussels sprouts are roasting, heat a skillet over medium-high heat. Add the corn kernels and sauté for about 5-7 minutes until they are slightly charred. Remove from heat and set aside.

Make Lime Aioli
In a small bowl, mix together the mayonnaise, lime juice, garlic powder, and a pinch of salt. Adjust seasoning to taste.

Combine Ingredients
Once the Brussels sprouts are done roasting, combine them in a large bowl with the sautéed corn, diced red onion, chopped cilantro, and crumbled Cotija cheese. Drizzle with the lime aioli and toss to coat evenly.

Serve immediately, garnished with additional cilantro and Cotija cheese if desired.
