Method

Fried Eggplant

    Prepare the Eggplant

    Slice the eggplant into 1/2 inch rounds. Sprinkle with salt and let sit for 30 minutes to draw out moisture. Rinse and pat dry.

    Coat and Fry

    Dredge the eggplant slices in flour and season with black pepper. Heat olive oil in a skillet over medium heat. Fry the eggplant until golden brown on both sides. Drain on paper towels.

Caponata

    Sauté Vegetables

    In a large pan, heat olive oil over medium heat. Add chopped onion, celery, garlic, and red bell pepper. Sauté until softened.

    Add Eggplant and Tomatoes

    Stir in diced eggplant and canned tomatoes. Cook for about 10 minutes, stirring occasionally.

    Finish the Caponata

    Add capers, red wine vinegar, sugar, salt, and black pepper. Simmer for an additional 10 minutes. Adjust seasoning to taste and let cool.

Poached Egg

    Prepare Water

    Bring a pot of water to a simmer and add vinegar.

    Poach the Eggs

    Crack each egg into a small bowl, then gently slide into the simmering water. Cook for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon.

Avocado Mousse

    Make the Mousse

    Blend avocado, lemon juice, and salt until smooth. Adjust seasoning if necessary.

Hollandaise

    Prepare the Sauce

    In a bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water and whisk until thickened.

    Incorporate Butter

    Slowly drizzle in melted butter while whisking continuously until the sauce is creamy. Season with salt to taste.
