    Prepare the Duck Legs

    Season the duck legs with salt and black pepper. Place them in a baking dish or a large pot.

    Add Duck Fat and Aromatics

    Pour the duck fat over the duck legs, ensuring they are fully submerged. Add garlic cloves, thyme, and bay leaves.

    Confit the Duck

    Cover the dish with foil and place it in the oven at 225°F (110°C) for about 2 to 3 hours or until the duck is tender and falling off the bone.

    Cook the Beans

    In a separate pot, cook the bacon until crispy. Remove and set aside. In the bacon fat, sauté onion, carrot, and celery until softened.

    Combine and Simmer

    Add the white beans and chicken broth to the pot with vegetables, bring to a simmer, and cook for about 20 minutes.

    Serve

    Remove the duck legs from the fat and crisp them in a skillet if desired. Serve the duck legs over the white bean mixture, garnished with crispy bacon.
