    Prepare the Duck Breast

    Score the skin of the duck breasts in a criss-cross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Cook the Duck

    In a cold, dry skillet, place the duck breasts skin-side down. Turn the heat to medium and allow the fat to render slowly. Cook for about 6-8 minutes until the skin is crispy and golden brown. Flip the duck and cook for an additional 3-4 minutes for medium-rare. Remove from the skillet and let rest.

    Prepare the Couscous

    In a separate pot, bring 1 cup of water to a boil. Add the couscous, stir, cover, and remove from heat. Let sit for 5 minutes, then fluff with a fork.

    Combine the Ingredients

    In a bowl, combine the cooked couscous, chopped dates, orange zest, orange juice, and chopped mint. Add olive oil and ras el hanout, mixing well. Season to taste with salt and pepper.

    Serve

    Slice the duck breast and serve it on a bed of the couscous mixture. Garnish with additional mint if desired.
