Chocolate Mousse Preparation

Make the Dark Chocolate Mousse
Melt the dark chocolate in a heat-proof bowl over simmering water. In a separate bowl, whip half of the heavy cream until soft peaks form. In another bowl, beat the egg yolks with sugar until pale. Fold the melted chocolate into the egg yolk mixture, then fold in the whipped cream.

Make the White Chocolate Mousse
Similarly, melt the white chocolate. Whip the other half of the heavy cream and fold into the melted white chocolate. Carefully fold in the beaten egg whites until combined.

Layering the Mousse
In serving glasses or molds, layer the dark chocolate mousse first, then the white chocolate mousse. Refrigerate until set, about 2 hours.

Make the Chocolate Crumble
In a bowl, mix the crushed chocolate cookies with melted butter until well combined. Spread the mixture on a baking sheet and bake at 180°C (350°F) for about 10 minutes until crispy. Let it cool.
Assembly

Assemble the Chocolate Dome
Once the mousse has set, add a layer of the Bordeaux cherry sauce on top and sprinkle with the chocolate crumble. Serve chilled.
