Peel the Russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a bowl of cold water for about 10 minutes to remove excess starch. Drain and pat the potatoes dry with a clean kitchen towel.

In a large mixing bowl, combine the grated potatoes, shredded cheddar cheese, finely chopped onion, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Cook the Hash Browns
In a large skillet, heat olive oil and butter over medium heat. Once hot, add the potato mixture, pressing it down evenly into the skillet. Cook for about 5-7 minutes on one side until golden brown and crispy.

Flip and Finish Cooking
Carefully flip the hash browns using a large spatula and cook for an additional 5-7 minutes on the other side until golden brown and crispy. Adjust the heat as necessary to prevent burning.
