    Prepare the oven and pans

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix dry ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

    Combine wet ingredients

    In another bowl, beat the eggs, then add in the vegetable oil and vanilla extract, mixing until well combined.

    Combine mixtures

    Add the wet mixture to the dry ingredients and stir until just combined. Fold in the grated carrots, walnuts, pecans, and white chocolate chips.

    Bake the cake

    Divide the batter evenly between the two prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool and assemble

    Allow the cakes to cool in the pans for 10 minutes, then remove and cool completely on wire racks. Once cooled, drizzle caramel sauce between the layers and on top of the cake.

    Slice and serve the carrot cake, optionally drizzling more caramel sauce on individual slices.
