Prepare the Crostini
Preheat the oven to 375°F (190°C). Slice the sourdough bread into 1/2-inch thick slices. Arrange the slices on a baking sheet and brush both sides with olive oil. Bake for 10-12 minutes, or until golden brown and crispy.

While the crostini are baking, slice the brie cheese into thin pieces. Once the crostini are done, let them cool slightly. Top each crostini with a slice of brie, a slice of apple, and a generous spoonful of apricot chutney. If desired, sprinkle chopped fresh rosemary on top for added flavor.
