Prepare the Ingredients
Wash and dice the potatoes, squash, and chop the cauliflower stems.

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally until they start to soften.

Add the Squash and Cauliflower
Add the diced squash and chopped cauliflower stems to the skillet. Season with salt and black pepper. Cook for another 5-7 minutes until all vegetables are tender.

Cook the Eggs
In a separate non-stick pan, cook the eggs over-easy until the whites are set but the yolks remain runny.

Serve
Divide the vegetable hash onto plates and top each serving with an over-easy egg. Garnish with fresh parsley.
