    Prepare the Batter

    In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt. In another bowl, combine milk, egg, and vanilla extract. Mix the wet ingredients into the dry ingredients until just combined. Fold in the diced apples.

    Heat the Oil

    In a deep pot or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fritters

    Drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pot. Fry for about 2-3 minutes on each side, or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Cinnamon Sugar Coating

    In a small bowl, mix powdered sugar and cinnamon. While the fritters are still warm, coat them in the cinnamon sugar mixture.

    Prepare Whipped Cream

    In a mixing bowl, whip the heavy cream and vanilla extract until soft peaks form.
