Method

Al Pastor Tacos

    Prepare the Marinade

    In a large bowl, combine pineapple juice, achiote paste, minced garlic, cumin, oregano, and salt. Mix well until smooth.

    Marinate the Pork

    Cut the pork shoulder into large chunks and add to the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Cook the Pork

    Preheat your grill to medium-high heat. Remove the pork from the marinade and grill for about 30-40 minutes, turning occasionally, until cooked through and slightly charred.

    Prepare Tacos

    Once cooked, let the pork rest for 10 minutes before slicing it thinly. Warm the corn tortillas on the grill for about 1 minute on each side.

    Fill each tortilla with sliced pork, chopped onions, and fresh cilantro. Serve with lime wedges.

Bulgogi Steak Tacos

    Make the Marinade

    In a medium bowl, whisk together soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger.

    Marinate the Steak

    Slice flank steak thinly against the grain and add to the marinade. Refrigerate for at least 1 hour or overnight for best flavor.

    Cook the Steak

    Heat a skillet over high heat. Remove the steak from the marinade and cook for about 2-3 minutes on each side until browned and cooked through.

    Prepare Tacos

    Warm the corn tortillas in a dry skillet for about 1 minute on each side.

    Fill each tortilla with bulgogi steak and top with chopped green onions and Sriracha sauce to taste.

Korean Chicken Tacos

    In a bowl, mix gochujang, soy sauce, minced garlic, and rice vinegar until combined.

    Cut chicken thighs into bite-sized pieces and add to the marinade. Let it marinate for at least 30 minutes.

    Heat a non-stick skillet over medium heat. Cook marinated chicken for about 7-10 minutes until fully cooked.
