Vegan Asian Ginger Tacos

Prepare Tofu

Press the firm tofu to remove excess moisture. Cut it into small cubes.

Marinate Tofu

In a bowl, combine soy sauce, sesame oil, minced ginger, and minced garlic. Add the tofu cubes and toss gently to coat. Let it marinate for at least 15 minutes.

Prepare Vegetables

While the tofu is marinating, thinly slice the green onions, carrots, red bell pepper, and shred the cabbage.

Cook Tofu

Heat a non-stick skillet over medium heat. Add the marinated tofu and cook for about 8-10 minutes, stirring occasionally, until golden brown.

Add Vegetables

Add the sliced green onions, carrots, red bell pepper, and cabbage to the skillet with the tofu. Season with salt and black pepper. Stir and cook for an additional 5-7 minutes until the vegetables are tender yet crisp.

Assemble Tacos

Warm the corn tortillas in a separate pan or microwave. Once warmed, fill each tortilla with the tofu and vegetable mixture, topping with fresh cilantro and a squeeze of lime juice.

Serve immediately while warm, garnished with extra cilantro and lime wedges on the side.
