    Marinate the Pork

    In a large bowl, combine the pork shoulder, minced garlic, chipotle pepper, oregano, cumin, paprika, salt, black pepper, and lime juice. Mix well to coat the pork evenly with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, ensure that the coals are evenly heated.

    Cook the Pork

    Remove the marinated pork from the refrigerator and place it on the grill. Cook for about 20-25 minutes on each side, or until the internal temperature reaches 145°F (63°C). During the last few minutes of cooking, add the diced pineapple to the grill and caramelize for about 5 minutes.

    Rest and Chop the Pork

    Once cooked, remove the pork from the grill and let it rest for 10 minutes. Then chop it into small pieces, ensuring the pieces are bite-sized for tacos.

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until they are pliable and lightly toasted.

    Assemble the Tacos

    To assemble each taco, place a generous amount of the chopped pork on a warm tortilla. Top with grilled pineapple, chopped onion, fresh cilantro, sliced radishes, and avocado slices.

    Serve

    Serve immediately with lime wedges on the side for an extra burst of flavor.
