Prepare Marinade

Combine Ingredients
In a medium mixing bowl, combine the grated fresh ginger, wasabi paste, fresh orange juice, fresh lime juice, soy sauce, sesame oil, honey, salt, and black pepper. Whisk together until well combined.

Marinate Tuna
Place the fresh tuna steaks in a shallow dish and pour the marinade over them. Make sure the tuna is fully submerged in the marinade. Cover with plastic wrap and refrigerate for at least 30 minutes to 1 hour, allowing the flavors to penetrate the fish.

Sear Tuna
Heat a non-stick skillet or grill over medium-high heat. Remove the tuna steaks from the marinade, allowing excess marinade to drip off. Reserve the marinade for later use. Sear the tuna steaks for about 1-2 minutes on each side for rare, or longer if you prefer your tuna more cooked.

Rest and Slice
Once cooked to your liking, remove the tuna from the skillet and let it rest for a few minutes. Then, slice the tuna steaks into thin slices.
Serve

Plate the Dish
Arrange the sliced tuna on a serving plate. Drizzle with some of the reserved marinade for added flavor.

Garnish
