Preparation of Beef

    Trim and Chop

    Trim any excess fat from the beef tenderloin and cut it into small cubes (about 1/4 inch).

    Chill the Beef

    Place the chopped beef in the refrigerator for about 15 minutes to chill before mixing.

Mixing the Tartare

    Combine Ingredients

    In a large bowl, combine the chilled beef, egg yolk, Dijon mustard, finely chopped red capers, minced shallot, Worcestershire sauce, chopped fresh parsley, salt, and black pepper.

    Mix Thoroughly

    Use a fork to mix all the ingredients thoroughly until well combined.

Serving

    Plate the Tartare

    Using a ring mold or a spoon, place a portion of the tartare mixture onto a plate.

    Garnish

    Garnish the tartare with microgreens for added freshness.

    Serve with Bread

    Serve immediately with toasted baguette slices on the side for spreading.
