1. Gather and Prepare Ingredients
Rinse all seafood under cold water and pat dry. Slice the zucchini and dice the red bell pepper. Halve the cherry tomatoes and chop the herbs.
2. Marinade Seafood
In a bowl, combine shrimp, scallops, and fish fillets with 2 tablespoons of olive oil, lemon juice, salt, black pepper, and red pepper flakes. Mix well and let marinate for 15 minutes.
Cooking
3. Sauté Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic, zucchini, red bell pepper, and cherry tomatoes. Sauté for about 5 minutes, until vegetables are tender.
4. Cook Seafood
Add the marinated seafood to the skillet. If using, pour in the white wine. Cook for another 5-7 minutes until the shrimp are pink, scallops are opaque, and fish is cooked through.
5. Add Spinach and Herbs
Stir in the fresh spinach leaves and chopped parsley and dill. Cook for an additional 2 minutes, until the spinach wilts.
6. Serve
Remove from heat and serve immediately, garnished with additional herbs if desired.
