Method

Preparation

  1. 1

    Prepare the Filet Mignon

Take the Wagyu filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps the meat cook evenly.

  2. 2

    Season the Meat

Generously season both sides of the filet mignon with kosher salt, freshly ground black pepper, and garlic powder. Ensure that the seasoning is evenly distributed.

Cooking

  1. 3

    Heat the Pan

In a heavy skillet (preferably cast iron or stainless steel), heat the olive oil over medium-high heat until it shimmers but does not smoke.

  2. 4

    Sear the Filet Mignon

Add the seasoned filet mignon to the hot skillet. Sear for about 3-4 minutes on one side or until a golden brown crust forms.

  3. 5

    Flip and Add Butter

Flip the filet mignon and add the unsalted butter and fresh rosemary to the skillet. Cook for an additional 3-4 minutes, basting the meat with the melted butter using a spoon.

  4. 6

    Check for Doneness

Use a meat thermometer to check for doneness. For medium-rare, the internal temperature should be around 130°F (54°C). Adjust cooking time as necessary.

  5. 7

    Rest the Meat

Remove the filet mignon from the skillet and place it on a cutting board. Cover loosely with aluminum foil and let it rest for about 5-10 minutes before slicing.
