Method
Cooking the Pasta
- 1
Cook the Radiatore Pasta
Bring a large pot of salted water to a rolling boil. Add the radiatore pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- 2
Drain the Pasta
Once cooked, reserve 1 cup of the pasta cooking water and then drain the pasta. Set aside.
Making the Alfredo Sauce
- 3
Sauté Garlic
In a large skillet or saucepan over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
- 4
Add Heavy Cream
Slowly pour in the heavy cream, stirring continuously. Bring the mixture to a gentle simmer.
- 5
Incorporate Parmesan Cheese
Gradually whisk in the grated Parmesan cheese until fully melted and incorporated into the sauce.
- 6
Add Truffle Oil and Seasoning
Add the truffle oil, salt, and freshly ground black pepper to the sauce. Stir well to combine and allow to simmer for an additional 2-3 minutes.
Combining Pasta and Sauce
- 7
Combine Pasta and Sauce
Add the cooked radiatore pasta to the Alfredo sauce, tossing to coat the pasta evenly. If the sauce is too thick, add the reserved pasta cooking water a little at a time until desired consistency is reached.
- 8
Rest Before Serving
Remove from heat and let sit for a minute before serving.
- 9
Serve
Serve hot, garnished with chopped parsley and additional grated Parmesan cheese if desired.
