Preparation of Sushi Tartare

    Chop the Fish

    Using a sharp knife, dice the fresh tuna or salmon into small cubes (about 1/4 inch).

    Mix the Marinade

    In a bowl, combine the diced fish, soy sauce, sesame oil, wasabi paste, and rice vinegar. Gently mix to coat the fish evenly.

    Chill the Mixture

    Cover the bowl with plastic wrap and place it in the refrigerator for about 15 minutes to allow the flavors to meld.

Preparation of Garnishes

    Prepare the Onion

    Finely slice the red onion and set aside in a small bowl.

    Chop the Parsley

    Roughly chop the fresh parsley and set it aside for garnish.

    Prepare the Egg Yolk

    Separate the egg yolk from the egg white in a separate small bowl.

Assembly

    Plate the Tartare

    Using a ring mold, carefully layer the chilled sushi tartare on a plate.

    Add Garnishes

    Top the tartare with the finely sliced red onion, chopped parsley, and place the egg yolk in the center.

    Serve

    Serve immediately with additional soy sauce and wasabi on the side.
