Pork Chops

Vegetable Medley

Method

Prepare the Pork Chops

  1. 1

    Season the Pork Chops

Pat the pork chops dry with paper towels. Rub each chop with olive oil, salt, black pepper, and garlic powder evenly on both sides.

  2. 2

    Sear the Pork Chops

In a large skillet over medium-high heat, add the seasoned chops and sear for about 4-5 minutes on each side until they are golden brown. Remove from skillet and set aside.

Prepare the Vegetable Medley

  1. 3

    Chop the Vegetables

Dice the zucchini, bell pepper, and red onion into bite-sized pieces.

  2. 4

    Cook the Vegetables

In the same skillet, add olive oil and heat over medium heat. Add the chopped vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until they are tender but still crisp. Remove from skillet and set aside.

Make the Sauce

  1. 5

    Combine Sauce Ingredients

In the same skillet, add the chicken broth, balsamic vinegar, and honey. Stir well and bring to a simmer, scraping up any brown bits from the bottom of the skillet.

  2. 6

    Reduce the Sauce

Allow the sauce to simmer for about 3-4 minutes, or until it thickens slightly. Stir in the fresh parsley.

Combine and Serve

  1. 7

    Reintroduce Pork Chops

Add the seared pork chops back into the skillet with the sauce, spooning some sauce over the top. Cook for another 2-3 minutes to heat through.

  2. 8

    Serve

Serve the pork chops topped with sauce alongside the sautéed vegetables. Enjoy your Pork Chops Di Vito!
