Calamari

Lemon Garlic Aioli

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

In a large bowl, combine the cleaned calamari rings with salt, black pepper, and cayenne pepper. Set aside to marinate for 15 minutes.

  2. 2

    Coat the Calamari

In a separate bowl, mix together the all-purpose flour and cornmeal. Dredge the marinated calamari rings in the flour mixture, ensuring they are well coated.

  3. 3

    Heat the Oil

In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small amount of the coating; if it bubbles and sizzles, it’s ready.

  4. 4

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and transfer them to a plate lined with paper towels to drain excess oil.

Lemon Garlic Aioli Preparation

  1. 5

    Make the Aioli

In a mixing bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Whisk together until smooth and well combined. Adjust seasoning to taste.
